Mix the batter correctly. Mix just long enough that the ingredients combine well. Otherwise, you can end up changing the texture of your cupcakes; over-mixing the batter usually makes the cupcakes tough.
In checking whether cupcakes are already done, you can use a toothpick. Prior to baking, preheat the oven for about 15 to 20 minutes. You have to check the cupcakes from time to time to avoid over baking.
While some of the upscale cupcake boutiques use expensive ingredients like Madagascar Bourbon vanilla, you don't have to go all out to create cupcakes fit for a special event like a wedding. Just be sure to use fresh and natural ingredients, such as butter and fresh fruit instead of margarine and frozen.
